Q: How do I store my Meats?

A: Except for the mortadella, everything is shelf stable at room temperature, however for best quality, store in your refrigerator between 33F and 40F


Q: How long will everything keep once opened?

A: Up to one month, or more if properly protected from oxygen exposure with plastic wrap, ziplock or butcher/wax paper. Cured meats have been made centuries prior to refrigeration, and if protected from oxygen, light, and extreme heat - are made to last the test of time


Q: What does “cured” mean?

A: Meat is rubbed with a mixture of salt, spices, and in some cases sugar. Over the course of 1 to 4 weeks, this mixture, or “cure”, will distribute throughout the whole muscle, draw moisture out of the meat, and create an inhospitable environment for bacteria growth. When a piece of meat is fully cured, is it then safe to hang to dry. A cured piece of meat will have a firmer texture and a pleasant brighter red hue to it. For ground and fermented products (salami) a small amount of nitrates is required by law - for this we use celery juice powder which is a naturally derived form of nitrate.


Q: Do I have to cook everything or can i eat it “raw”?

A: All products are sold as RTE, or ready to eat. That said, certain products benefit from cooking - like pancetta or guanciale. These products, as well as everything that is for sale, can be used to flavor vegetables, or in pastas and pizzas. You can be as creative as you’d like.



Q: How will my package arrive?

A: products are vacuum sealed in and sent via FedEx or USPS in a recyclable box.


Q: I live in another state, how can I get your product?

A: We only ship to California, but stay tuned!


Q: Do you do events or pop-ups?

A: Yes! we have done pop-ups at wineries, wine shops, restaurants, weddings and tech companies.


Q: I’m a winery, restaurant or small grocery store, how do I carry Canteen Meats?

A: We do not wholesale at the moment, but are open to doing events with you in person.


Q: I live in Marin/Sonoma County- is there anywhere I pick up instead of shipping?

A: Yes! Come see us at the Marin Civic Center farmers market every Thursday or Sunday, Larkspur on Saturday. Can’t make the market? message us through the site, or through instagram and schedule a pick up at our petaluma shop!
