This is a deboned pork roast from the pig’s midsection including the loin and belly —rolled with its skin on around a heavily seasoned filling of garlic, salt, fennel seeds, fennel pollen, and Meyer lemon zest.

This is a raw roast to be slow-roasted until the meat is juicy and the skin shatteringly crisp like chicharron. Cooking instructions are attached.
